Marinade the chicken in the buttermilk and spice mix for anything up to 24 hours ideally at least 4 2. Make the sauce by combining the mayo with the other ingredients 3. Make the slaw by shredding the lettuce and cabbage and mixing through the chopped peppers and parsley with the brine 4. Dredge the chicken thighs well in the flour mix squeezing everything together, fry at 170c/350f for approx 10-12 mins ensuring the internal temp is at least 73c/165f 5. Add a spoon of the frying oil to the chilli sugar mix and stir. Brush this onto the cooked chicken while hot 6. Toast the bread with the butter then build the sandwich 7. Recipe 👇 We basically make homemade sun dried tomatoes (dried out in the oven), which are sweet, tangy and super concentrated in flavor. Once they’re mostly dried out, they go on top of a bed of parmesan and back in the oven until they’re nice and crispy! These are absolutely delicious plain (my husband isn’t a tomato person, but he loves these!) or even better dipped in an easy homemade basil aioli. Tag us if you make them!! Parmesan Tomato Chips: (makes 24) 5-6 roma tomatoes, sliced 1/4 inch thick 3/4 cup shredded parmesan, finely chopped Basil Aioli (this will make more than you need – save it for sandwiches, roasted veggies or burgers!): 1 whole egg 2 tbsp chopped fresh basil 1/2 clove garlic 1/2 tsp dijon mustard 3 tbsp lemon juice 1/2 tsp kosher salt (plus more to taste) 1 cup olive oil Preheat oven to 175˚F (convection), or as low as your oven goes (200˚F will work). Place the sliced tomatoes on a parchment paper-lined sheet pan. Bake for 2-3 hours, until the edges are mostly dried out. The center may still be a little soft – that’s fine! (At 175˚F convection, this took us right around 2 1/2 hours, but it may vary based on your oven.) Remove from oven and increase heat to 400˚F. On a nonstick sheet pan, portion out the parmesan into ~1/2 tablespoon piles, spaced about 2 inches apart. Place a dried tomato on each pile. Cover the sheet pan with aluminum foil and return to the oven for 8-12 minutes, until the parmesan is lightly browned around the edges. Remove from the oven and let cool for a minute before removing with a spatula. Let them cool completely before enjoying! To make the aioli, add the egg, basil, garlic, dijon, lemon juice and salt to a vessel just slightly larger than your immersion blender. Blend together until smooth, then with your blender off but still at the bottom of the vessel, pour in the oil VERY slowly. Blend from the bottom and slowly lift the immersion blender upward until the aioli is emulsified (this shouldn’t take long!)
